I don't often make HOMEMADE pizza (ok, never!) but I recently saw one on this blog that looked so good I had to try it.
I purchased a pre-made crust and was THRILLED when I found all of the other ingrediants at a local, small town grocery store. Here are the ingrediants for the "sauce", which is more like a spread.
1 clove of fresh garlic (I used garlic in a jar)
Handful of fresh basil (right from my basil plant!)
1/4 cup Parmesan cheese
1/4 cup almonds
1/2 cup sun dried tomatoes packed in olive oil
Grind those ingrediants in a food processor. It will be firm and spreadable. Add salt and pepper to taste.
Spread onto your crust, then add the toppings: one chicken breast (cooked), 1/2 sliced onion and as many Kalamata olives as you would like. For me, that means A LOT.
I can't tell you how flavorful this pizza was - WOW! I did think it was a little dry so next time - and there will be a NEXT TIME! - I may try adding a little bit of olive oil to the sauce. Overall it was a great dinner and I encourage you to give it a try!
